Auf 2 Hektarn in der Gemeindeappallation Volnay produzieren das Weingut ihren Domaine Jean-Marc Bouley AOC Volnay 2019. Die Pinot-Reben sind durchschnittlich 25 Jahre alt und verteilen sich auf 5 unterschiedliche Parzellen am Ober- und am Unterhang mit südöstlicher Ausrichtung. Im Weinberg, so die Auskunft der Domaine, wird auf chemische Düngemittel und Unkrautbekämpfung verzichtet. Nach der Gärung in offenen Fässern erfolgt der 18-monatige Ausbau im Holz.

Nase:
Der Volnay Village 2019 ist in der Nase frisch wie auch heftig und erinnert zusammen mit den leicht säuerlichen Noten von Berberitze und Cranberrys an ein Sauerteigbrot. Die Frucht wirkt hier heller und frischer als beim 2018er, dafür aber auch etwas fordernder und weniger voll und nobel. Dafür ist es ein sehr kompletter, stimmiger Volnay mit leicht ätherischen Anklängen.

Gaumen:
Am Gaumen wirkt der Volnay Village saftig und fast süffig. Man merkt direkt: Das hat Anspruch, bleibt aber im besten Sinne unkompliziert und macht einfach Lust auf mehr in der Kombination von roter Beerenfrucht, ein wenig Milchschokolade, Kräutern, ein wenig Feuerstein, Unterholz und Bresaola. Das Tannin ist, typisch für Bouley, elegant und pudrig, aber es ist leicht griffig, und die Säure ist ganz präzise.
