Chateau Pavie

Am Hang von Pavie, an dem früher kleine Weinbergspfirsiche – sogenannte „Pavies“- wuchsen,
wurden im 4. Jahrhundert die ersten Weinreben von Saint- Emilion gepflanzt. Das Weingut entstand
Parzelle für Parzelle und unter dem Namen Pavie wurde bereits bei der ersten Klassifizierung und
wurde bereits bei der ersten Klassifizierung der Weine von Saint-Emilion zum Premier Grand Cru
Classe ernannt.
Heute ist das Weingut mit seinem zusammenhängenden Weinberg am südlichen Hang von Saint-Emilion
eines der größten unter den Premier Grand Cru Classes. Das außergewöhnliche sich über drei Ebenen
erstreckende Terroir – leicht keisig am Hangfuß, ton- und kalkhaltig in der Hangmitte und kalkhaltig auf
dem Plateau – hat mir der Ankunft von Chantal und Gerard Perse im März 1998 volle Entfaltung gefunden.
Diese Kombination unterschiedlicher Terroirs verleiht den Weinen von Pavie eine außergewöhnliche Kom-
plexität, die Dank entsprechender Erträge und einer individuellen Vinifizierung der einzelnen Parzellen in
zwanzig thermoregulierten Holztanks zur Geltung gebracht wird. Der Ausbau dieses herrlich strukturierten
und eleganten Weines findet in einem Weinkeller statt, der mit seinen großen Arkaden aus Stein und seiner
monumentalen Wandmalerei von Michel Pourteyron mit dem Titel „Grappe Symphonie“ sicherlich zu den
originellsten und modernsten in Bordeaux zählt.

The 2016 Pavie is simply magnificent. Gracious. perfumed and exquisitely beautiful. the 2016 has it all. I can't remember seeing a Pavie with this much translucent energy and nuance. Black cherry. plum. lavender. spice and menthol all infuse this explosive. young wine with tremendous character. In the glass. the 2016 is vivid. aromatically deep and full of saline-infused energy. It is without question one of the wines of the vintage. As it turns out Gerard Perse also opened the 2008. Although the two vintages (2016 and 2008) in question are quite different in style and quality. the trajectory Pavie has taken in recent years is evident. The 2016 is a thrilling wine. That's all there is to it. The blend is 60% Merlot. 22% Cabernet Franc and 18% Cabernet Sauvignon. Tasted two times.

Spectacular aromas of crushed berries. such as blueberries and raspberries. Fresh flowers with hints of sandalwood. Exotic. Saturated palate of so much fruit. yet remains agile and energetic. Great length and texture. Fills your mouth. This needs time. but a classic. Twin brother of the perfect 2015.

The 2016 Pavie a blend of 60% Merlot and 40% Cabernet Franc. Very deep purple-black in color. it needs a little coaxing to begin. slowly unfurling to reveal a fragrant perfume of violets. chocolate-covered cherries. crushed blueberries and eucalyptus over a core of preserved plums. kirsch. black raspberries and crème de cassis plus hints of licorice and chargrilled meat. Full-bodied and built like a brick house. it has a solid foundation of firm. super ripe. grainy tannins and seamless freshness interknit with the black fruit preserves and minerally layers. finishing very long and very decadent. Superb!

Intense aromas of cherries and spices. Full and layered without being heavy. It starts large and rich, but the tension and tannins tighten down. It's structured and powerful. Velvety, edgy tannins. Very salty at the end. Like an unpolished diamond. It now includes Pavie Decesse and Bellevue. Slightly overdone but wait and see. 52% merlot, 30% cabernet franc and 18% cabernet sauvignon.

Released in a special bottle to celebrate the 25th harvest of Gerard Perse, the 2022 Château Pavie checks in as 52% Merlot, 30% Cabernet Franc, and 18% Cabernet Sauvignon, which is in line with recent vintages, although one important factor is that both Pavie Decesse and Bellevue Mondot will no longer be produced and will are now incorporated into the Château Pavie. Given the quality of those two releases, I don't see that affecting the quality of the Grand Vin. The 2022 sports a deep, saturated purple hue as well as a gorgeous bouquet of ripe cassis, blackcurrants, espresso roast, violets, and chalky minerality. Hitting the palate with full-bodied richness, it has a layered, opulent mouthfeel, velvety tannins, integrated oak, and a great finish. This is another heavenly Pavie that's going to shine with just 5-7 years of bottle age and evolve for 30-40 years or more.

As dense and deep as this wine is, what is important to note is the vibrancy and freshness on the palate. That sense of lift remains from the mid-palate through to the finish. Composed of 50% Merlot, 34% Cabernet Franc and 16% Cabernet Sauvignon, the 2020 Pavie weighs in with an alcohol of 14.82% and a pH of 3.61. It is aging in French oak barriques, 75% new. Opaque purple-black colored, notes of plum pudding, blueberry pie and dark chocolate-covered cherries charge out of the gate, followed closely by hints of eucalyptus, star anise, unsmoked cigars and fertile loam with a hint of cedar chest. The full-bodied palate is built like a brick house, offering very firm yet wonderfully ripe, velvety tannins and seamless freshness to support the densely laden, muscular black and blue fruits, finishing very long and with loads of mineral-laced layers. As hedonic as it is cerebral this year, it is a beautiful paradox.

The 2020 Pavie was picked September 21–30 at 31hl/ha and matured in 75% new oak, the rest one year old. It continues to see greater emphasis on Cabernets – 34% Franc and 16% Sauvignon, the Merlot reduced to half the blend. This gradual rejigging of the blend is borne out on the nose, which features hints of damp loamy soil and bell pepper infusing vivid blackberry and wild strawberry fruit, becoming more and more citrusy with aeration. The palate is medium-bodied with sautéed tannins that gently grip. Powerful, but the 14.82° alcohol is neatly disguised on the finish (at least in tasting measure) with fine delineation. Cohesive and focused. I would like to see a little more personality develop during élevage, but this remains an impressive Saint-Émilion and a Pavie with a long future ahead.

This is really something. Sort of speechless when I taste it. It shows evocative aromas of wet earth, oyster shell, dust, tile, blackberries and blueberries.
Full body, ultra-fine tannins and a length and intensity that is so, so fine. A wine in perfect harmony. Complete. Hard not not to drink. Energetic and balanced.
Better to wait for 10 years. Try in 2028.

In 2015, the blend is 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon and the wine was matured 80% in new French oak. Deep garnet-purple in color, the 2015 Pavie is still sporting a bit of its oak to begin, giving way to a glorious nose of crushed black cherries, blackberries and mulberries plus hints of dried roses, stewed tea, unsmoked cigars and garrigue. The rich, concentrated, full-bodied palate delivers an incredible structure of very firm, very ripe tannins and a racy line of freshness cutting through the dense layers of perfumed black fruits and savory notions, finishing with epic length.

Cuvee: 60 Merlot / 22 Cabernet Franc / 18Cabernet Sauvignon Alkoholgehalt: 14.50 Vol.% Der Kern ist dicht und kompakt im Zentrum schwarz. Das Aroma ist verdammt vielschichtig und mit Tiefe. Fast alle dunklen Beeren die man so kennt. Blaubeere, Holunder, etwas rote Beete. Man spürt das Holz, aber es ist zum Glück nicht überladend. Im Mund ist der Wein grosszügig und einnehmend. Massen an reifen und kraftvollen Tanninen. Auch hier setzt die Frucht ein tolles Gegenstück zu Allem. Mineralisches Finish und lang, lang ... lang. In Zeiten, in denen alle den Holzeinsatz zurückfahren, steht Pavie wie der Fels in Brandung dar, wahrscheinlich der kräftigste aller Saint-Emilion Weine. Wenn der Holzeinsatz allerdings so perfekt verdaut und kompensiert wird, darf man es dem Chateau nicht für übel nehmen und vergibt ihm 97-99 Punkte.

The 2018 Pavie is composed of 60% Merlot. 22% Cabernet Franc and 18% Cabernet Sauvignon, harvested October 1-10 with yields of 38 hectoliters per hectare. The wine has a 3.58 pH and 14.48% alcohol. Very deep purple-black in color, the nose starts off quiet and stern, swiftly growing exponentially in the glass to reveal powerful plum preserves, fruitcake, coffee beans, smoked meats and black olives scents with emerging nuances of roses, hoisin, molten chocolate and licorice plus a waft of candied violets. WOW—the palate explodes with waves of black fruit preserves, exotic spices and savory chocolate, framed by very firm, super ripe, velvety tannins and an electric backbone of freshness, finishing with epic length and energy. Amazing, singular wine—it could only be Pavie.

The 2018 Pavie is a powerful, racy wine. Deep, unctuous and impeccably polished, the 2018 Pavie has so much to offer. A rush of red/purplish berry fruit, floral notes, leather, lavender and mocha all race across the palate. Even with all of its obvious tannin and structure, the 2018 Pavie is incredibly appealing and sensual from the very first taste. I can't wait to see it in bottle und vergibt ihm 94-97 Punkte.
