Mit mehr als 32 ha Weinbergen gehört die Domaine des Deux Roches von Christian Collovray und Jean-Luc Terrier nicht gerade zu den kleinen Besitzungen in der südlichen Bourgogne. Wir sind sehr froh, dass wir auf der Suche nach erstklassigen weißen Burgundern auch Proben von diesem Saint Véran dabei hatten. Welch ein Erlebnis, dieser perfekt vinifizierte weiße Burgunder, der sich sehr wohltuend aus der Masse der vielen breiten und eher langweiligen Weine abhebt. Perfekt von Perfektionisten, das gilt auch für die beiden „Kleinen“ dieser Domaine. Der Macon-Villages Blanc ist wohl das Beste, was man im Moment finden kann, und der rote Macon aus der Gemeinde Pierreclos ist „outstanding“. Von mehr als 30 Jahre alten Weinstöcken und teilweise in neuem Holz ausgebaut, zeigt er auch den hartnäckigen Kritikern, dass auch Gamay eine Traube für außergewöhnliche Weine sein kann. Diese Weine werden Sie begeistern.

Tasting notes: 

This medium purple wine has the aroma of red fruits, ripe strawberries and cherries, with notes of spice from the oak. On the palate there is a touch of clove and black pepper, and the fruit flavours are prolonged into a cherry finish. 

100% Gamay

Vinification: 

The grapes are handpicked in mid-September. The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures half of the wine is then transferred to oak barrels, and half of it to a steel vat, where it undergoes alcoholic fermentation and is aged until the following Spring (April/May).

Terroir: 

The Mâcon is known for it's rolling limestone hills that experience more sun, less rain, and less risk of frost than the rest of Burgundy. ‘Verger des Feuilants' is a parcel of 50-year-old Gamay vines situated in the village of Charnay-lès-Mâcon. Its name comes from the face that the parcel is divided in two by a small peach, apple, and plum orchard (a ‘verger' in French). These parcels have south-westerly aspects that expose them to sunlight throughout the day and allows them to maintain their warmth late into the evening. This ensures the vines do not suffer rapid temperature fluctuations and stimulates photosynthesis, ensuring that the Gamay grape (usually associated with the Beaujolais region, further south) can develop physiological ripeness quickly, under stress, in Burgundy's precarious continental climate.

Collovray et Terrier Saint Veran Blanc Tradition 2016



Tasting notes:
Saint-Véran ‘Tradition' is a pale gold wine with rich floral aromas complemented by hints of pear, green apple, peach and apricot, all well-integrated on the palate and reinforced by creamy oak notes, and a medium to long floral finish.

Vinification: 
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures. It then undergoes alcoholic fermentation, malolactic fermentation, and lees aging in vat until the following spring (April/May). Lees stirring takes place throughout the maturation period.

Terroir:
Saint-Véran lies between the escarpments of Solutré and Vergisson (from which the Domaine des Deux Roches takes its name), on the southernmost slopes of a of a 250 km long and 5-6 km wide prehistoric limestone ridge that runs through the valleys carved out by the river Soâne. Its vineyards are among the few in Burgundy with a southerly aspect, which exposes the vines to maximum sunlight and warmth, as well as winds that help to moderate their temperature and stimulate photosynthesis. This allows Chardonnay to develop physiological ripeness quickly, under stress, in a precarious continental climate.

Mâcon-Villages ‘Tradition' is a pale gold wine with aromas of stone fruits and floral notes that are reinforced by a slight green apple sharpness, and mineral note that resounds on the palate.

Vinification:
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures. It then undergoes alcoholic fermentation malolactic fermentation, and it is blended and aged in vat until the following Feburary/March.

Terroir:
The Mâcon is known for it's rolling limestone hills that experience more sun, less rain, and less risk of frost than the rest of Burgundy. The vines that produce the Chardonnay that goes into our Mâcon-Villages ‘Tradition' are planted in the clay and limestone soils of Charnay, Davayé, and Pierreclos.

Tasting notes:
This is a medium gold wine, with an aroma of green apples, citrus, supported by floral and mineral notes, all of which are balanced on the palate with an mineral finish.

Vinification:
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures. It then undergoes alcoholic fermentation malolactic fermentation, and is aged in vat until the following Feburary/March.

Terroir:
The vineyards of Burgundy run along a 250 km long and 5-6 km wide prehistoric limestone ridge that runs through the valleys carved out by the river Soâne. This wine made from vines on north-westerly facing slopes is allowed to mature late into the harvest season and develops physiological ripeness slowly, under stress, in a precarious continental climate.

Tasting notes:

‘Vieilles Vignes' is a deep gold wine that has an intense brioche aroma with hints of stone fruits and flowers, and a restraint that hints at its minerality. It has a complex palate of green apples, with hints of citrus, creamy oak notes, and a mineral austerity that perseveres into an impressive finish. 

Vinification:
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures before it is transferred to oak barrels (30% of which are new) to undergo alcoholic fermentation. After alcoholic fermentation the wine is left on the lees to undergo malolactic fermentation. Then they are left to age, on the lees, and under oak, until the following spring (April/May). Lees stirring takes place throughout the maturation period.

Terroir:
Pouilly-Fuissé is the most prestigious appellation in the Mâconnais. The grapes that eventually become ‘Vielles Vignes' come from three different parcels ideally situated in suntraps on the slopes of escarpment of Vergisson in the hamlets of Pouilly, Solutré and Fuissé, and mature on 60 to 90 year old vines. These parcels all have south-easterly aspects that expose them to sunlight and warmth, which stimulates photosynthesis, and allows Chardonnay to develop physiological ripeness quickly, under stress, in Burgundy's precarious continental climate.
